This question sparked our journey to create
the ultimate yakiniku experience
—Yakiniku -TEN-.

Rooted in the timeless appeal of traditional tare (sauce-based)
yakiniku pioneered by our predecessors,
we aim to transcend conventions—not as niku kappo or modern Japanese fusion,
but with the pride of being a true,
uncompromising yakinikuya.

Our pursuit of the ultimate yakiniku is guided by five core beliefs:

of Wagyu beef

In an era where Wagyu is often dismissed as overly fatty, we invite guests to rediscover the elegance of real Kuroge Wagyu—light, clean, and deeply satisfying.
We source only the finest cuts from rare, dedicated producers, offering an indulgent experience of "sensual lean meat" that defies expectations.

2.Perfecting the primal pleasure of
tare yakiniku

The moment when rich, complex sauce meets flame-kissed beef—that’s the origin of yakiniku’s instinctive appeal.
We express the essence of truly delicious yakiniku—meat that stirs the craving for a bowl of steaming white rice.

3.Masterful grilling
for each individual cut

We’ve developed a custom grill that combines traditional roasters with iron plates and multiple heat sources.
By adjusting the grilling method to each cut, we deliver the ideal doneness every time, unlocking the full potential of each piece of meat.

4.An exclusive, private setting
with dedicated grill masters

Only four private rooms—completely secluded and available by reservation only.
Each is attended by a personal grill master who serves every cut at its perfect moment, crafting a luxurious, private yakiniku experience.

5.The exquisite harmony of
meat and wine

Our wine pairings are tailored to each course, including a selection of mature Grand Vins.
We deliver moments of sublime indulgence, where wine and meat elevate one another to their fullest expression.

“What does ‘delicious’ truly mean?”
At Yakiniku -TEN-, everything begins with this question.

In pursuit of truly exceptional beef, we traveled across Japan,
meeting dedicated producers—and arrived at a single, profound answer.

That answer is “Animal Welfare”:
A philosophy that emphasizes raising animals in stress-free, healthy environments.
The unfortunate reality is that many Kuroge Wagyu cattle are force-fed to produce excessive marbling, compromising their health
in the process.
Some become so unhealthy they struggle to walk, with organs discarded due to regulatory concerns.

“What truly makes beef safe,
ethical, and delicious?”

Seeking that answer led us to select Tajima-Guro, a rare breed from the Tajima lineage,
raised in genuinely humane and sustainable conditions.
We source our beef from Ueda-san, a remarkable producer who embodies both sustainability and animal welfare with sincere dedication.

With deep gratitude for the life we are given, we honor each ingredient—maximizing its potential,
treating it with care, and presenting it with respect.
