As we shaped our vision,
we pursued the question of what truly makes excellent beef.
Visiting producers across Japan,
we discovered the key concept
of “Animal Welfare.”
Though still unfamiliar to many,
“Animal Welfare”
means raising animals in as stress-free an environment as possible,
aiming for healthy living conditions.
The more we learned about cattle,
the more we realized many Japanese Black Wagyu are raised in very unhealthy conditions.
They are fed specially formulated feed to forcibly produce marbled meat,
but this leads to severe health issues—many cattle struggle to walk on their own or are nearly blind by the end.
Because of this, internal organs from such Wagyu are often prohibited from consumption and discarded,
though this fact is not widely known.
“What is the genuine beef that is truly safe, delicious, and worthy of serving our customers?”
In our search for truly healthy cattle,
we visited numerous producers and carefully selected Miyazaki’s Tsuman Beef,
Hyogo’s Tajima-Gen,
and Mie’s Matsusaka Beef.
While “sustainability” often sounds like it only considers the longevity of livestock farming from a human perspective,
the producers we met truly embody both sustainability and animal welfare.
They are truly remarkable growers who successfully balance these two values.
We have rejected the idea that something only needs to taste good in the moment.
We deeply respect the act of taking life,
and the precious cycle of
gratitude that comes with it.
With this awareness,
we strive to serve dishes that fully honor these exceptional ingredients.
